Spinach & Eggs Puff Pastry Tart Recipe


This Spinach and Eggs Puff Pastry Tart recipe makes for a fabulous weekend breakfast! Adjust the ingredients as you would like. For example, skip the bacon for a vegetarian version, add more cheese, skip the spinach.


Ingredients


1 sheet of store-bought puff pastry, thawed according to package instructions

1 c. fresh spinach, washed and chopped

1 c. cherry tomatoes, halved

1 c. shredded cheese (e.g., cheddar, mozzarella, or gruyere)

4-6 slices of cooked bacon, crumbled

4 large eggs

2 T. olive oil

Salt and pepper to taste

Optional: Fresh herbs like parsley or chives for garnish


Directions


1. Preheat the Oven: Preheat your oven to 375°F (190°C).


2. Roll out the thawed puff pastry sheet on a lightly floured surface to fit a rectangular baking sheet. Transfer the pastry to the baking sheet. You can also fold over the edges slightly to create a raised border.


3. Using a fork, gently prick the surface of the puff pastry all over. This will help prevent the pastry from puffing up too much while baking.


4. Brush the pastry surface with olive oil. Spread the chopped spinach evenly over the pastry, followed by the halved cherry tomatoes. Sprinkle the shredded cheese and crumbled bacon over the vegetables.


5. Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes or until the puff pastry turns golden brown and the cheese is melted and bubbly.


6. While the tart is baking, cook the eggs sunny-side-up in a separate non-stick pan. Add a small amount of oil to the pan, crack the eggs into it, and cook them over medium heat until the egg whites are set, but the yolks are still runny. Season with salt and pepper.


7. Once the tart is out of the oven, carefully slide the sunny-side-up eggs onto the surface of the baked tart.


8. Sprinkle chopped fresh herbs like parsley or chives over the tart for added flavor and a pop of color. Slice the tart into portions and serve warm.


This fresh-baked puff pastry tart with spinach, tomatoes, cheese, bacon, and sunny-side-up eggs is a delightful and satisfying dish perfect for brunch or a special breakfast.
