Ingredients
1 large sweet potato, sliced into ½-inch planks
1 t. coconut oil
Sea salt to taste
Sweet and/or savory toppings of choice
peanut butter and banana
Greek yogurt and raisins
hummus with veggies
avocado
Nutella and berries

Directions
1.   Preheat the oven to 400° F. Line a rimmed baking sheet with a piece of parchment paper for easy clean up.
2.   Lightly grease the sweet potato planks with coconut oil and season to taste with salt.
3.   Place the sweet potato slices in the oven and bake until fork-tender and slightly browned around the edges, approximately 16-20 minutes.
4.   Remove the sweet potato toasts from the oven and allow to cool for a couple of minutes before topping with your sweet or savory toppings of choice.
